BLUE CHEESE COLESLAW

Ingredients

1 pkg (454 g) packaged coleslaw mix or alternatively use 6 cups
shredded fresh green and/or purple cabbage
1 bunch green onions, finely sliced
1 large carrot, thinly sliced or shredded
1 large granny smith apple, finely chopped

Dressing:
1 tub (142 g) Rosenborg-Castello® Crumbled Blue Cheese
1/2 cup (125 mL) apple cider vinegar
1/2 cup (125 mL) mayonnaise


1/2 cup (125 mL) sour cream
1 tbsp (15 mL) Dijon mustard
1 tbsp (15 mL) granulated sugar
1 tsp (5 mL) salt
1 tsp (5 mL) ground white pepper

Garnish (if desired):
1/2 cup (125 mL) walnut pieces, toasted

Method

In a large bowl toss together coleslaw mix, green onions, carrot and apple. In a medium bowl mix together dressing ingredients. Add dressing into coleslaw mixture and stir to incorporate. Season with additional salt and pepper if desired. Top with walnut pieces if desired and serve.
